Johnny Cakes (corn cakes)  


1/2 cup of flour 

1 cup of cornmeal 

2 teaspoon of sugar 

1 teaspoon of salt 

1 lightly beaten egg 

1 cup of hot water or milk 

1 tablespoon of shortening 

2 tbsp canola oil 


Mix all of the dry ingredients together and then stir in the egg, water or milk, and the shortening. 


Drop or pour into a hot, cast iron skillet greased with canola to form small cakes, and fry until golden brown on both sides.  


Can be eaten with butter as bread or with molasses or syrup as pancakes.
