Marinated Herb Baked Salmon  


4 medium to large fillets of salmon 

1 T fresh dill or 1 tsp powdered dill 

1 tsp basil 

1 cup cooking sherry or white wine 

1 tsp olive oil 

2 tsp butter or margarine, softened 

Lemon pepper 


Place fillets flat in a glass or stainless steel baking dish. Pour cooking sherry or wine over fillets then sprinkle the tops of fillets with dill and sweet basil, let stand for 20 minutes (refrigerated). 


Rub butter and olive oil on salmon then sprinkle with lemon pepper and bake uncovered for 30 minutes in a 350° F preheated oven. 


Pairs nicely with saffron seasoned or herb infused rice.
