BAKED CHICKEN PARM – DIJON
3 – 8oz chicken breast
¼ cup parmesan cheese, grated
¼ cup butter, melted
2 tsp lemon juice, fresh
¼ cup dijon mustard
¼ tsp black pepper
1 ½ cup bread crumb,unseasoned
2ea green onion, finely chopped
1 ½ tsp tarragon, dried
paprika – to sprinkle top
Combine half of the parmesan cheese, lemon juice, melted butter, green onion and half
the tarragon
with the Dijon mustard and mix until well blended.
In a large bowl mix bread crumb, parm cheese, black pepper and tarragon. Blend
well.
Rinse chicken and pat dry with paper towel. Dip chicken into mustard mix then coat
with breadcrumbs.
Place in a shallow non – stick or pan sprayed baking dish. Top with a light sprinkle
of paprika.
Bake chicken in a preheated 475 degree oven for 15 to 18 minute or until chicken is
golden brown.
This dish goes well with orzo or rice (white or brown).
Note: If you are baking in a convection oven bake at 435 degrees (preheated).
