GIBLET
GRAVY
Giblets from
turkey, cooked
1 ½ stems celery, cooked - chopped
1 small
onions, cooked – chopped
½ small
carrot, cooked – chopped (optional)
6 tbsp. fat from turkey roastings
5 tbsp.
flour
3 ½ c. broth from turkey (drippings) – can use chicken broth Salt and pepper to taste
Skim fat from
broth and add to sauce pan. Heat fat then add flour and cook until lightly brown. Stir constantly. Add broth and
continue stirring until all flour is dissolved and gravy is smooth. Cook until gravy thickens. Add chopped
giblets and vegetables, let simmer. Salt and pepper to taste.
