Creole Pork Chops  

 

4 pork chops, ½-inch thick 

Salt and black pepper 

1 T salad oil

¼ tsp red pepper flakes 

½ cup chopped onions; 

¼ cup chopped green pepper 

1 small clove garlic, minced 

One 8-oz can tomato sauce 

1 bay leaf

 

Season chops with salt, black pepper and red pepper flakes brown in oil. Remove from skillet.

 

Add onion, green pepper and garlic cook until vegetables soften, do not brown.

 

Return chops to skillet.

 

Add remaining ingredients and stir.

 

Cover and let simmer 45 minutes or until meat is tender.

 

Serves 4.
