Oven-Fried Chicken

 

1 (3 lb.) frying chicken, cut into serving pieces
1 egg, lightly beaten

2 tbsp. mayonnaise

1tsp. Dijon mustard 

1 tbsp. canola oil

1 c. all-purpose flour, seasoned

1 c. bread crumbs, plain - fine
2 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1/2 tsp. garlic powder
1/4 tsp. poultry seasoning

1/4 tsp. sage, ground

1/4 tsp. cayenne pepper

1 tsp. seasoning salt

non – stick cooking spray

 

 

Clean chicken pieces under cold running water and soak for at least one hour in 2-3 quarts of water with 1tbsps of salt added.

 

Remove from water and pat dry with paper towels and place in a bowl.

 

Preheat the oven to 350°F.

 

In a stainless steel baking pan, ceramic, pyrex, or pan line with aluminum foil spray non-stick cooking spray (generous amount) to coat bottom of pan.

 

Combine flour, bread crumb and half of the seasonings, blend well.

 

Mix mayonnaise, Dijon mustard, egg, canola oil and the other half of seasoning together.  

 

Place chicken pieces into mayonnaise mix and coat chicken.

 

Remove the chicken from mixture, shaking off extra mayo mix and then into the flour mix, coat evenly, then place into the coated pan (be sure to leave space between pieces of chicken).

 

Bake in 375 degree preheated oven for 35 minutes then turn with a metal spatula and let bake 15 -20 minutes. Chicken should be brown and crispy.

 

Chicken should be golden brown and ready to serve. Let rest at least 5 minutes.

 

Estimated bake time 50 min. to 1 hour. If not browning you will need to adjust your oven temp by 25 degrees.
