Healthy Omelette
2 tbsp canola oil
1 ½ tbsp onion, small dice
1 tbsp green pepper, small dice
1 tbsp red pepper, small dice
2 oz turkey sausage, cooked and chopped
5 oz egg light mix (recipe below)
1-2 oz low fat cheese (your choice)
In an omelet pan Heat oil over medium-high heat.
Sauté vegetables until they begin to soften slightly.
Add the sausage and continue to sauté for about half a minute.
Pour in egg light mix and move around slowly in a circular motion.
When egg begins to setup, use a rubber spatular to pull back on omelet allowing the
raw egg to run into the pan and cook.
Once omelette is setup, fold on to the plate.
Egg Light Mix
8 oz egg whites
1ea large eggs
Combine, mix until well blended.
Enjoy.
